It’s officially summer in Texas and I’m a big ol’ grump about it. The 100+ degree heat just has a special way of scorching the fun out of many of my favorite activities. For example – A walk around the neighborhood? Sure, as long as it’s at the a$$ crack of dawn! Dining al fresco? Great, I love a side of sweat and sunburn with my meal. Backyard brunch? The mosquitos would LOOOVE that!
In addition to a well air-conditioned environment, something that keeps me from being a negative Nancy all season long is the food I associate with summer: The fresh fruit, crisp salads, just about anything from the grill, and these no-cook shrimp summer rolls. They’re quick, customizable, served with a delicious peanut sauce AND require zero cooking. What a blessing.
