Cantaloupe Quinoa Salad

Ingredients
  

Cantaloupe Quinoa Salad

  • 1 cup Quinoa cooked according to package directions
  • 2 cups Arugula
  • 1 cup Cantaloupe balls or cut into bite-sized cubes
  • 1 cup Cucumber sliced
  • 2 Tbsp Mint thinly sliced
  • 1/2 cup Feta crumbled

Jalapeño Lime Dressing

  • 1/2 Jalapeño thinly sliced, more or less depending on heat preference
  • Juice of 1-2 limes
  • Salt start with 1/4 tsp, more to taste
  • 1 tsp Honey
  • 1/4 cup Extra virgin olive oil

Instructions
 

  • Mix dressing ingredients until combined. Taste and add more lime, salt, or jalapeño as needed.
  • Place the arugula, quinoa, cucumber, cantaloupe, mint, and feta in a bowl.
  • Add dressing and enjoy. Preferably in air conditioning with a cold Topo Chico in hand.
